When I went to ASU back in the day, there was mostly fast food on campus. It’s nice to see some delicious eats coming to campus. Yelp gave us Elites a chance to dine at one of The Crepe Club’s locations. I love the story of this place about three brothers coming from Syria to attend ASU. They got their degrees and then started up a crepe cart on campus. It became so popular that they opened their own restaurant at the Biltmore. Recently they opened up this permanent location right next to Old Main on ASU campus. I got two mini crepes so I could try both a sweet and savory one. The creme de lemon was nice and warm and I enjoyed the delicious lemon aftertaste. The chicken florentine is packed with flavor – grilled chicken, sautéed mushrooms, spinach and mozzarella cheese. Super good! This location has a walk up window with an outdoor patio area with tables and shading. I got a nice visit from Maria the operations manager who offered me a yummy macaroon. The Crepe Club is a nice addition to my old digs.

Quinoa Egg Bake with Thyme and Garlic

Ingredients:
1 teaspoon butter
1/2 cup uncooked quinoa
8 eggs
1 1/4 cup milk
1 tablespoon chopped garlic
1 teaspoon chopped fresh thyme
1/2 teaspoon fine sea salt
1/2 teaspoon ground black pepper
2 cups packed baby spinach, roughly chopped
1 cup finely shredded Romano or Parmesan cheese

Method:
Preheat the oven to 350°F. Butter an 8×8-inch baking dish; set aside.

Put quinoa into a fine mesh strainer and rinse with cold running water until water runs clear; drain well.

In a large bowl, whisk together eggs, milk, garlic, thyme, salt, pepper and quinoa. Stir in spinach then pour mixture into the prepared dish. Cover tightly with foil then jiggle dish gently from side to side so that quinoa settles on the bottom in an even layer. Bake until just set, about 45 minutes. Remove foil and sprinkle top evenly with cheese. Return to oven and bake, uncovered, until golden brown and crisp, 10 to 15 minutes more. Set aside to let cool briefly, then slice and serve.

My best way to describe Morning Squeeze is bright, bold decor (lime green and surfer-blue colors), booths and barstools and a very large dog-friendly patio area. This location is in Scottsdale and owned by the same owner as another Valley favorite RA Sushi. Some of the breakfast items (with some fun names) include the Belfer Fit Bowl (a brown rice, quinoa and egg white bowl), Cool Beans Rancheros, Party Hardy Steak & Eggs, Creme Brûlée Pancakes, Power Protein Pancakes and several Antioxidant bowls. I came here with a friend on a quiet day and received pretty good service. I ordered the Cali Benne (Poached eggs with avocado slices, spinach, tomatoes, on an english muffin with hollandaise). The food was delicious and we had a nice time here.

Jimmy & Joe’s Pizzeria

Serious Slices

I checked out Jimmy & Joe’s Pizzeria recently with a group of friends before a concert. They are located in Chandler and have been around since 2006. They try to keep their menu simple by having a limited menu consisting of pizza, wings and salad. But they are serious about their slices. They have several pizza creations you can chose from and if you are serious about size, order their 24″ Big Jimmy size. We ordered the Popeye. This pizza creation has spinach, basil, garlic, feta, tomato and mozzarella. Jimmy & Joe’s also serves Eegee’s – a popular frozen drink chain from Tucson. Their other location is in the Mesa area.

Egg Casserole

This is actually a New Years Day tradition of mine because you can put it all together the night before and then just throw it in the oven the morning after (perfect after having a bit too much champagne the night before). I made it for church this morning and it was a hit.

  • 1 Package (10 oz) frozen chopped spinach, thawed
  • 4 large croissants
  • 6 eggs
  • 1 1/2 cups low-fat 1% (or other type) milk
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 teaspoon pepper
  • 6 oz grated Monterey Jack or Cheddar cheese
  • Four strips of bacon, chopped

Place thawed spinach in a large wad of a paper towels and squeeze out as much water as you can. Grease a 9 x 13 inch baking dish. Cut croissants in half and overlap them slightly in two rows in the dish. Beat eggs in a medium bowl. Stir in milk, spinach, nutmeg, pepper and chopped bacon. Pour over croissants and sprinkle with cheese. Cover and refrigerate for 8 hours, up to 24 hours. Preheat oven to 350 degrees. Uncover casserole and bake and bubbly and light brown around edges, 30 to 35 minutes.

Crackers & Company Cafe is a scratch kitchen that has been serving the Valley since 1984. They serve both breakfast and lunch and pride themselves on fresh ingredients. I came here with a friend and got the California Eggs Benedict (an english muffin topped with fresh spinach, bacon, avocado, tomato, 2 poached eggs, and adobo hollandaise sauce). Crackers is also known for their homemade desserts. I hear the Augustinas Brandied Cinnamon Bread Pudding (photo below from website) is pretty amazing and hope to try it sometime soon.
